Our Heritage: Where Passion Meets Craftsmanship

In the sun-kissed hills of Italy, our family's dedication to preserving time-honored salumi techniques began. Passed down through generations, our craft marries passion with precision. Each salumi is a masterpiece, a culmination of heritage and artistry.

Meet Our Founder and Inspiration: Fabio Viviani 

Fabio, originally from Tuscany, began working nights in a Florence, Italy bakery at age 11.By 14, he was working in Florence restaurants, and by 16 he was a sous chef serving in 120 seat trattoria. At 27, Fabio owned and operated 7 Florence restaurants. In 2005, Fabio moved to the states and became a serial restaurateur - now with more than 30 restaurants in the US.  He has appeared on Top Chef and countless TV programs.  He partnered with Nic on Heritage Salumi, because he recognized that top quality charcuterie was not available in the states - until now.  Consistent with Fabio's mantra, "If something needs to get done right, you have to do it yourself."  And he's done it with Heritage.

Meet Our Maestro Salumiere: Nic Tangredi

Nic Tangredi, originating from the picturesque Como Area in Italy, practically grew up amidst the tantalizing aromas of his family's salumificio. From a tender age, Nic would join his father in the bustling workshop, absorbing the time-honored traditions and artisanal techniques of crafting cured and dry meats.

Upon his arrival in the United States in 2017, Nic embarked on a mission to share his passion for authentic Italian salumi with American connoisseurs. Drawing from his rich heritage and years of hands-on experience, Nic swiftly made a mark in the culinary landscape.

Throughout his journey, Nic has lent his expertise to various distributors and companies as a trusted consultant, all the while nurturing a profound desire to revolutionize the American charcuterie scene. Partnering with renowned chef Fabio Viviani, Nic now embarks on a groundbreaking venture – Heritage Salumi.

Together with Fabio, Nic aims to not only honor the rich traditions of Italian salumi craftsmanship but also to introduce a new era of unparalleled taste and sophistication to salumi aficionados across the nation. Through Heritage Salumi, they envision elevating the palates of those who seek more from life's culinary experiences, providing discerning food enthusiasts with the finest artisanal salumi available.
