1. What is the difference between salami and salumi?
The salumi family encompasses all kinds of Italian cured meats, and that includes salami.
2. What is salami made of?
Salami is typically made of ground meat (usually pork, beef, or a mix), fat, salt, spices, and sometimes garlic. It is fermented and air-dried.
3. How is salami made?
Salami is made by mixing ground meat then adding salt, and spices. This mixture is then stuffed into a casing and left to ferment at a controlled temperature. After fermentation, it is air-dried until it reaches the desired dryness.
4. What are salumi?
Salumi is the Italian way of saying cured meats and it includes all products that are made by using a fermentation and aging process. With or without the use Nitrites and Nitrates.
5. Why is Heritage salumi different in size?
We do small batch production and manufacture in an artisanal way in order to minimize waste. When we slice for our customers we slice the whole piece not just what looks nice.
6. Is salami cooked or raw?
Salami is not cooked but cured and fermented, which makes it safe to eat without cooking.
7. How long does salami last?
Unopened salami can last up to 6 weeks in the pantry and several months in the refrigerator. Once opened, it should be consumed within 3 to 4 weeks.
8. Can you eat the white mold on salami?
Yes, the white mold on the outside of salami is generally safe to eat and helps protect the salami during curing. If you find white mold take a cloth and rush it off.
9. What’s the difference between salami and pepperoni?
Salami is a broader category of cured sausage that can be made with a variety of meats and seasoning. Pepperoni is a type of salami made from pork and beef, seasoned with paprika or other chili peppers.
10. Is salami gluten-free?
Our salami is made without fillers and no gluten is used.
11. How many calories are in salumi?
On average, there are about 110 calories in a 1-ounce serving of salami.
12. Are there different types of salami?
There are many, in Italy alone there about 40 different kinds.
13. How should you store salami?
Store unopened salami in a cool, dry place. After opening, wrap it in parchment or wax paper and store it in the refrigerator.
14. How are meats cured?
Meats are cured by applying salt, sugar, nitrates or nitrites and or celery powder.
15. What’s the difference between cured meats and salami?
Cured meats have been preserved through salting, smoking, or drying, whereas salami is precooked.
16. Are cured meats safe to eat?
Like every food in moderation they are a great source of protein and a healthy snack.
17. How long do cured meats last?
Stored in the refrigerator, cured meats can last for up to 2 months, depending on the type of meat and the curing process.
18. What are some examples of cured meats?
Examples include bacon, ham, prosciutto, salami, and chorizo.
19. Is there nitrate-free salami?
Yes, some brands offer nitrate-free options, often labeled as "no nitrates or nitrites added."
20. How should salami be stored after opening?
After opening, salami should be stored in the refrigerator, tightly wrapped, and consumed within three to five days.
21. Is eating deli meats safe when pregnant?
Pregnant women are advised to avoid deli meats unless they are heated to an internal temperature of 165°F (74°C) due to the risk of listeria.
22. Can you freeze salami or cured meats?
Yes, salami and cured meats can be frozen for up to two months. Wrap them tightly in plastic wrap or use a vacuum sealer for best results.

Once perfectly aged, the salumi is vacuum sealed to maintain exceptional freshness and meticulously hand-wrapped in specialty paper that preserves its integrity and taste. This attention to detail ensures that each slice retains its intended aroma and savoriness.
25. How quickly will I receive my Heritage Salumi order?
All of our orders are shipped express they will be there before you know it.
26. How long can I expect Heritage Salumi to keep?
(shelf-life) Unopened one-year shelf life. Once opened about 4 weeks but that will vary with what is in your fridge and the temperature of it. Put the salami in a zip lock bag for optimal preservation.

Meet Our Founder and Inspiration: Fabio Viviani 

Fabio, originally from Tuscany, began working nights in a Florence, Italy bakery at age 11.By 14, he was working in Florence restaurants, and by 16 he was a sous chef serving in 120 seat trattoria. At 27, Fabio owned and operated 7 Florence restaurants. In 2005, Fabio moved to the states and became a serial restaurateur - now with more than 30 restaurants in the US.  He has appeared on Top Chef and countless TV programs.  He partnered with Nic on Heritage Salumi, because he recognized that top quality charcuterie was not available in the states - until now.  Consistent with Fabio's mantra, "If something needs to get done right, you have to do it yourself."  And he's done it with Heritage.

Meet Our Maestro Salumiere: Nic Tangredi

Nic Tangredi, originating from the picturesque Como Area in Italy, practically grew up amidst the tantalizing aromas of his family's salumificio. From a tender age, Nic would join his father in the bustling workshop, absorbing the time-honored traditions and artisanal techniques of crafting cured and dry meats.

Upon his arrival in the United States in 2017, Nic embarked on a mission to share his passion for authentic Italian salumi with American connoisseurs. Drawing from his rich heritage and years of hands-on experience, Nic swiftly made a mark in the culinary landscape.

Throughout his journey, Nic has lent his expertise to various distributors and companies as a trusted consultant, all the while nurturing a profound desire to revolutionize the American charcuterie scene. Partnering with renowned chef Fabio Viviani, Nic now embarks on a groundbreaking venture – Heritage Salumi.

Together with Fabio, Nic aims to not only honor the rich traditions of Italian salumi craftsmanship but also to introduce a new era of unparalleled taste and sophistication to salumi aficionados across the nation.
